last week was a crazy busy week. but it was fun. i mean, who doesn't love to smell freshly baked cakes every day? or take a (some) bites of yummy cookies. haha.

but just in case you're too lazy to open a new tab, i also write to you here.

you will need:

75 ml thick coconut milk (i use sweetened condensed milk)
180 gr flour (i use all purpose flour)
1 tsp baking powder
5 medium eggs
1 tsp cake emulsifier (i skip this)
180 gr sugar
1/2 tsp vanilla essence
150 gr margarine, melted
50 gr grated cheddar cheese
topping:
50 grams of grated cheddar cheese

how to make:
prepare a baking sheet (round pan with a hole in the middle) 22cm.
basting with margarine and sprinkle some flour. set aside.
mix and sift flour and baking powder. set aside.
Preheat oven to 160'C
mashed tape with fork, mix with milk. stir well. set aside.
beat eggs, sugar and cake emulsifier until fluffy, white and thoroughly condensed.
add vanilla essence. and beat for another 30seconds.
add the cassava mixture little by little. beat with low speed mixer until well blended.
add the margarine little by little, stirring gently with a spatula.
add the flour mixture gradually, stirring with a spatula then add grated cheddar cheese. stir well.
pour into pan. Bake in oven for 45-60 minutes until browned. (do the skewer test)
let it sit in the pan for a while. then remove from the pan, add topping and cut into pieces.
